APPLE PIE TACOS RECIPE



Ingredients
  1. 5 large flour tortillas
  2. 4 tablespoons unsalted butter, divided
  3. 3/4 cup sugar, divided
  4. 3 teaspoons cinnamon, divided
  5. 4 Granny Smith apples, peeled and diced
  6. 1 tablespoon lemon juice, freshly squeezed
  7. 1/4 cup caramel sauce, optional
  8. whipped cream, optional


Instructions
  1. Preheat oven to 400°F (204°C). Set aside a 12-cup muffin pan.
  2. Using a 4-inch round cookie cutter, cut 4-5 circles from each tortilla. Repeat until you have about 20 in total.
  3. In a medium bowl, combine 2 tablespoons melted butter with 1/4 cup sugar and 1 teaspoon cinnamon.
  4. Place one tortilla circle into the bowl and toss until coated. Repeat for the remaining circles.
  5. Flip the muffin tin upside down. Insert one tortilla piece in between every two muffin cups until all tacos are in place.
  6. Bake for 5-6 minutes until golden.
  7. Meanwhile, mix the chopped apples with lemon juice and the remaining 1/2 cup sugar and 2 teaspoons cinnamon.
  8. Place a skillet on medium heat and add the remaining 2 tablespoons butter. Add the apple mixture and sauté for 3-4 minutes until soft.
  9. Remove tacos from oven and spoon apple mixture into them. Top with optional caramel sauce and whipped cream to serve.

  1. *For peanut butter brownie batter bars, simply sub peanut butter for the almond. You can also use cashew butter, sunflower butter, or even pecan butter. I haven’t tried but think a buttery spread or coconut oil should work – if anyone tries it before I do, definitely let me know how it goes!
  2. Preheat oven to 350 F. Line a 9×13 pan with parchment. If nut butter is not soft, gently heat until stir-able. Combine the first four ingredients in a bowl. Stir remaining ingredients in a separate bowl (really stir well, as you don’t want to end up with a clump of baking soda when you take a bite). Pour dry into wet and stir to combine. Smooth into prepared pan. I like to place a sheet of wax or parchment on top and smooth the batter by pressing down. (Remove the sheet before baking.) Bake on the center rack, 14 minutes for “brownie batter” bars – they should look underdone when you remove them. Let cool, then very loosely cover and let the pan sit either on the counter or in the fridge for at least 8 hours, during which time they will firm up without losing their extreme fudginess. (If you’d prefer cake-ier bars to fudgy ones, you can simply bake longer, but I’d still recommend removing before they look completely done, because they continue to firm up as they cool.)

EASY FROZEN STRAWBERRY DESSERT



INGREDIENTS
  1. 3 cups graham cracker crumbs (about 22 full sheet graham crackers)
  2. 3/4 cup unsalted butter, melted
  3. 6 tablespoon granulated sugar
  4. 8 oz cream cheese, softened
  5. 1/2 cup powdered sugar
  6. 1 can 14 oz sweetened condensed milk
  7. 1 teaspoon vanilla extract
  8. 1 cup heavy whipping cream
  9. 1 cup diced strawberries
  10. 2 1/2 cups whole strawberries


INSTRUCTIONS
  1. Spray a 9 x 13 inch pan with non - stick spray. Set aside.
  2. In a medium dish combine graham cracker crumbs, sugar and melted butter. Press half of the mixture on the bottom of a 9X13 inch pan, save the rest for later.
  3. Place the whole strawberries in a blender and puree for about 1-2 minutes until completely smooth. Set aside.
  4. In a medium dish beat heavy whipping cream 1 min at a low speed, then at high speed, until stiff peaks form, for about 4 min. Set aside.
  5. In a large dish beat cream cheese and powdered sugar at a low speed, until creamy, then add condensed milk, vanilla and pureed strawberries and beat until combined.
  6. Add whipped cream beat until well combined .
  7. Fold in diced strawberries. Spread over the graham cracker layer.
  8. Sprinkle with the rest of the graham cracker crumbs.

“Pinkie Bars” Sugar Cookie Bars:

  1. 3 1/2 cups flour
  2. 1/2 teaspoon salt
  3. 1 teaspoon bak­ing pow­der

  7. 1 teaspoons vanilla extract

Cream Cheese Frosting:
  1. 1 8 Oz cream cheese, softened
  2. 1/2 cup butter, softened
  3. 2 cups powdered sugar
  4. 1 teaspoon vanilla

INSTRUCTIONS
  1. Preheat oven to 350 degrees. Have a cookie sheet (jelly roll) pan ready. I like to line mine with aluminum foil and spray it with cooking spray so that the bars easily lift out and are easy to cut.
  2. In a medium bowl, whisk together flour, salt, and baking powder. Set aside.
  3. In a mixing bowl, cream together 1 cup butter softened and sugar until light and creamy. About 2-3 minutes. Beat in the eggs, vanilla, and food coloring until combined.
  4. Add the flour mixture until a soft dough forms. Press into the bottom of the cookie sheet. Bake for about 15 minutes until the edges start to pull away from the sides and a toothpick entered into the center comes out clean. Allow to completely cool before frosting.
  5. To make the cream cheese frosting, beat together the cream cheese and butter. Add the powdered sugar and vanilla. Beat together until smooth. Frost the top of the bars and sprinkle with your favorite sprinkles. Enjoy!

Ingredients

INGREDIENTS
  1. 1 cup unsalted butter 227g, unsalted, room temp
  2. 1 cup granulated sugar 234g
  3. 2 eggs
  4. 4 cups all-purpose flour 500g, sifted
  5. 3/4 cup cornstarch 80g, sifted
  6. 3/4 teaspoon kosher salt 4g
  7. 1 tablespoon vanilla extract 15mL
  8. 1/4 cup pink sanding sugar 50g
  9. few drops pink food coloring

Instructions

  1. It's easiest to make two separate batches of cookie dough; one uncolored and one pink just use half the ingredients for each batch. You can however make a big batch of dry and a big batch of wet ingredients then divide in half using a scale, color one and mix.
  2. In these instructions we will be making two batches starting with the uncolored batch.
  3. Sift 2 cups flour, 40g cornstarch, and about 1/3 tsp salt into a large bowl then whisk to incorporate.
  4. In a stand mixer fitted with a paddle attachment cream 1/2 cup room temperature butter, and 1/2 cup sugar together.
  5. Mix in 1 1/2 tsp vanilla extract, then one egg to the sugar/butter mixture.
  6. Add 1 egg to each sugar/butter mixture.
  7. On low, mix in dry mixture until almost combined. Scrape the bowl down then mix once more until just combined.
  8. Roll out to a 1/4 inch thickness then transfer onto a baking sheet and place in refrigerator to chill. I like to roll my cookie dough between two layers of plastic for ease of transfer and clean up.
  9. Now it's time to make the pink batch. Repeat the above steps but add in a few drops of soft pink food coloring to the butter sugar mixture along with the vanilla.
  10. Roll out as before and sprinkle about ¼ cup pink sanding sugar onto the pink batch. Give a gentle roll to press the pink sugar into the dough.
  11. Cover with plastic, transfer to a baking sheet and chill for at least 20 minutes to firm up.
  12. Once the dough has chilled use a ruler and a sharp knife to cut ½ inch strips of dough. Return to fridge while you work on the next batch.
  13. Layer pink and white stripes so that they are touching.
  14. Cover dough with a sheet of plastic wrap or parchment paper then roll to create a seal. Transfer to the fridge to chill on last time.
  15. Preheat to 375 degrees F.
  16. Cut cookies with a heart shaped cutter.
  17. Carefully lace cookies on a baking sheet lined with parchment paper or a silicone baking sheet.
  18. Bake for about 12 minutes then allow to cool before enjoying.

Red Velvet Oreo Truffles Ingredients
  1. 20-24 Oreo Red Velvet Sandwich Cookies (12.2-Ounce Package)
  2. 12oz Bag of White Chocolate Melts or White Chocolate Chips – I used Wilton Bright White Candy Melts
  3. Assorted Valentine Sprinkles – I Used Wilton Sweetheart Valentine Sprinkles Mix

HOW TO MAKE RED VELVET OREO TRUFFLES

  1. First, line a large baking pan with wax or parchment paper and set aside. Open the brick of cream cheese and place in a large mixing bowl to soften at room temperature for 30 minutes.
  2. Pulse the red velvet Oreo cookies (the whole cookie) into crumbs in a food processor and add to the cream cheese. Mix well with a rubber spatula until well incorporated. Cover and chill for 30 minutes for easier handling.
  3. Next, roll the Oreo mixture into 1 inch balls and place on the lined baking sheet. Chill for an additional 15 minutes.
  4. Meanwhile, in a double boiler pan, melt the white chocolate melts under low/medium heat. Stir occasionally until melted and smooth. Pour into a shallow bowl for easier dipping.
  5. Now, dip an Oreo ball into the melted chocolate and place back on the lined baking sheet. Immediately cover it with sprinkles.
  6. The chocolate will harden rather quickly because the Oreo balls have been chilled so be sure to sprinkle right away or you may have to dip the balls again in the chocolate. Repeat that step until all of the truffles have been coated with chocolate and sprinkled.
  7. (Optional – you could also drizzle some melted red chocolate melts on top of the truffles if you wanted to add more color)

  3. In a large bowl beat the butter on high speed, until creamy. On medium speed beat in the sugar until combined. Then, beat in egg yolk, milk, and vanilla extract. Mix in food coloring.
  4. Add dry ingredients into the wet ingredients and mix in on low speed. Add more food coloring if needed.
  5. Spread 1 Tablespoon of mixture into the bottom of each cupcake liner (The mixture will be very sticky).
  6. Bake 6-7 minutes to pre-bake the crust (slightly prebaked crust will rise and sink in the center, and that’s OK).
  7. To make the cheesecake layer beat the cream cheese on medium-high until smooth, then add sour cream and sugar and mix until combined. Add the egg white and vanilla and mix on medium speed until combined. Do not overbeat or the cheesecake will crack. Add 2-3 Tablespoon of cheesecake mixture on top of the red velvet, spreading it to completely covers.
  8. Bake for about 18-20 more minutes, until cheesecake topping is no longer jiggly when you shake the pan. Tent loosely with aluminum foil to make sure the tops of the cheesecake does brown.
  9. Cool for 30 minutes at room temperature, then refrigerate to set for 1-2 hours. Before serving top with heaping Tablespoon of whipped cream and garnish with sprinkles if desired.
